Arsenic in Brown Rice May Harm Young Children's Health
Brown rice retains its outer bran layer, which contains fiber, vitamins, and minerals, but also accumulates higher concentrations of arsenic compared to polished white rice. Arsenic is an element present naturally in soil and water, as well as through agricultural inputs such as fertilizers and pesticides. Research, including reports from Dartmouth College, indicates that dietary arsenic exposure from frequent consumption of rice products is associated with potential developmental and cognitive risks in young children.
Inorganic arsenic can disrupt cellular function, and developing bodies are considered more susceptible due to their smaller mass and developing organ systems. Researchers note that culinary techniques such as thorough rinsing and cooking in excess water can reduce arsenic concentrations in prepared rice. Geographic origin also influences arsenic levels, with basmati varieties cultivated in India and Pakistan generally exhibiting lower concentrations.
Diversifying grain intake with alternatives such as quinoa, barley, and bulgur is also recognized as a method to mitigate dietary exposure.
